Baked Turkey Meatballs

1 lb Turkey
1 Egg
Italian Breadcrumbs
Italian Seasoning, Salt, Pepper, Garlic Powder (or pressed garlic), Grated Parmesan


In a mixing bowl combine egg and turkey. Season to taste.


While mixing add breadcrumbs until the turkey is no longer runny and has a more solid, doughy consistency.


Grease a baking sheet and place the meatballs with space in between.


Bake at 350 for 15-20 minutes. The time will vary depending on the size of your balls (that's what she said) so keep an eye on them.


When the meatballs have about 3 minutes left heat a pan on the stove and bring your sauce of choice (we used tomato sauce) to a light simmer. When they come out of the oven place the meatballs straight into the pan and cook until sauce is hot and the meatballs are covered in sauce.

Perfect Pesto Pasta

We had some leftover pesto from dinner last night so we decided to make a pasta salad out of it. It was really easy, yet delicious. We used angel hair pasta and prepared it according to the package.


We added the pesto and mixed it in thoroughly.


We added some feta cheese...


...and then we tossed in some artichoke hearts and green olives.


Once it's well mixed its all ready to eat!

Apple Cider Pumpkin Cake

While looking at some food blogs, we came across this recipe. Excited to try another pumpkin recipe, we bought the ingredients and starting baking. This recipe is very simple and turned out pretty well. It's great if you want something simple and hassle-free. Next time we may even experiment with a different cake mix flavor.


Cake
Ingredients - yellow cake mix and one 15oz can of pumpkin

In a bowl, mix the pumpkin and cake mix.




Put the batter into a greased pan (we used an 8x8, but the original recipe uses a 7x11) and bake at 350 F for somewhere around 25 or 30 minutes (whenever an inserted toothpick comes out clean)


Apple Cider Glaze


Ingredients: 1/2 teaspoon pumpkin pie spice, 1 cup powdered sugar, and 2 tablespoons apple cider


Whisk ingredients until completely mixed.


Spread the glaze over the cake (after it has cooled) and enjoy!

Goat Cheese and Olive Wheat Pizza

This was our first time making pizza together, and it was extremely fun and delicious. We bought some raw dough, shredded mozzarella, goat cheese, and green olives from Trader Joe's.



Put flour down on your workspace and roll your dough to the thickness you prefer. We made two personal size pizzas with thin crust.






We did the usual order of toppings: sauce, mozzarella, everything else.

Bake at 450 for around 10 minutes (the thinner your dough the closer you should watch it).


Slice and enjoy.

Sautéed Zucchini and Mushrooms

This a simple and healthy side dish. We used Pam to sauté zucchini and mushrooms. We added paprika, garlic powder, salt, and pepper. It was quick, but delicious.

Chocolate Chip Pumpkin Bread

Fall is our favorite time of year, due to the weather, food, and holidays. Once late September rolls around, we are ready with cans of pumpkin and chocolate in hand. We have enjoyed this recipe together for two years now, which we have adapted from Allrecipes.com. It makes 3 loaves and always turns out well!



Ingredients
3 cups white sugar
1 (15 ounce) can pumpkin puree
1 cup vegetable oil
2/3 cup water
4 eggs
3 1/2 cups all-purpose flour
1 1/4 tablespoon ground cinnamon
3/4 tablespoon ground nutmeg
2 teaspoons baking soda
1 1/2 teaspoons salt
between 1 1/2 and 2 cups of semisweet chocolate chips (we tend to eyeball to our chocolate liking)


Directions
1. Preheat the oven to 350 degrees F. Grease 3 loaf pans.
2. In a large bowl, combine sugar, pumpkin oil, water, and eggs. Beat until smooth. Blend in flour, cinnamon, nutmeg, baking soda, and salt. Fold in chocolate chips.
3. Bake until an inserted knife comes out clean (probably about an hour.) Cool on wire racks before removing from pans.
