Burrito Bowl For 2


Ingredients:

  • 1 cup brown rice
  • 1 3/4 cups water
  • 1/4 cup lime juice (lemon works too)
  • 1/3-1/2 cup cilantro
  • 2 chicken breasts
  • 1 hot pepper
  • 1 tomato
  • 1 avocado
  • sour cream and shredded cheese (optional)
  1. Cook the rice in the water, lemon juice, and cilantro.
  2. Cube the chicken and sear on a skillet with either a Mexican or all purpose seasoning.
  3. Chop the vegetables.
  4. Mix it all up and add the sour cream and cheese on top.

Verde Bean and Cheese Enchiladas

Last week I had a craving for a bean and cheese wrap with salsa verde, but we were out of salsa verde. I finally had the chance to go to the grocery store this weekend and was able to make this for dinner tonight. It's a very simple recipe but I wanted to add it to the collection as a reminder for a quick and easy meal.  


In the microwave (or in a pan over the stove) melt shredded cheese on a tortilla. I used mozzarella but any type of shredded cheese would work. Also, I highly recommend Trader Joes' whole grain tortillas with flax. Not only are they delicious, but they're also healthy.


Add some beans and/or meat, vegetables, etc. and heat a second time.


Spoon some salsa verde on top and enjoy!

Tortilla Pizza


I had the pleasure of spending all last week in New York City with Michael, helping him move. We had the opportunity to try a ton of really great restaurants. One night we had dinner and drinks at a bar. I ordered a healthy whole wheat pizza with veggies which came out on a very thin crust, similar to a tortilla. It was so delicious I knew I had to try to make my own version once I got home. I threw some pizzas together tonight and really liked how they turned out. I will definitely make this recipe again.


Ingredients
tortilla(s) - amount depends on how many pizzas you'd like to make
tomato sauce
shredded mozzarella cheese
toppings of your choice

First, cover a cookie sheet with foil. Put the tortilla(s) on the cookie sheet and spread the tomato sauce.


Add the cheese and toppings. I used broccoli, black beans, and mushrooms. Pop the pizzas in the oven at 350 degrees for about 10 minutes.
